Christmas is undoubtedly the most wonderful holiday. These are gifts, family comfort, the light crackling of logs in the fireplace … The main festive dessert in France is called Bûche de Noël – Christmas log.
Along with the baked goose and turkey, a sponge roll soaked in cream, doused with chocolate glaze and decorated with confectionery mushrooms and candied fruits is sure to decorate the festive table of the French on Christmas night. In Russia, the analog of this dessert can be considered the Soviet Log cake.

Ingredients for the dough:

📌6 eggs ⠀

📌180g of sugar ⠀

📌1 tea spoon of baking powder ⠀

📌1 table spoon of apple cider vinegar ⠀

📌1 table spoon of honey ⠀

📌200g of flower ⠀ ⠀

Ingredients for the cream:

📌1 liter of cream 33% ⠀

📌250g of Philadelphia cheese ⠀

📌60g of icing sugar⠀

📌2-3 table spoons of cocoa powder⠀ ⠀


1. Separate egg whites and yolks ⠀

2. Whip egg whites first and then add all remaining ingredients for the dough. Mix everything very well!⠀

3. Pour the mixture onto a baking sheet. Make sure you cover a sheet with wax paper or parchment⠀

4. Bake on 360 Fahrenheit or 180 Celsius for 15 min ⠀

5. For the cream, mix whipped cream for about 5 min. Add icing sugar and cocoa powered and mix for another minute. Remove whipped cream. Separately mix Philadelphia cheese until mass gets a nice and smooth texture. Add cream back in and mix for another 3-5 min. ⠀

6. Spread jam on a biscuit and then add the cream. ⠀

7. Roll the biscuit into the roll⠀

8. Decorate it the way you want it⠀
